Thats a mouth full to say… I’m sure only because you are drooling though. Yes, it is time to make something gourmet to satisfy your longing for the European adventure. You know, the one you have been saving for… oh maybe that is just me. Regardless, this is a great entertaining dish or for spoiling yourself on a night in.
8 chicken thighs
8 wide strips of prosciutto (thin sliced cured ham that is a staple in Italy, but found at your local grocery)
Fresh Rosemary (a bunch of it)
Mozzarella cheese (1-2 ounce) – Fresh and local is good, or just mozzarella sticks to make measuring easier
Minced Garlic (about 2-3 tablespoons)
Red onion – (about 1/4 cup) unless you use more for a side dish
Bottle of white wine- 1/2 for marinading, the other for
Salt and pepper to taste!
A little olive oil to taste
Cutting knife and board
Bag to marinade in
Oven and mitts
Marinade the Chicken with 1/2 white wine bottle, over half the red onion, 2tbsp garlic, salt, pepper, and half the rosemary as long as you can. At least four hours, overnight is best.
When ready to cook, preheat the oven to 350°
Grab the chicken out of the bag and lay on the cookie sheet. Remove excess rosemary and lay open to the inside.
Sprinkle with salt, pepper, the little bit of onion left over, then distribute the tablespoon of garlic on each chicken thigh. Add a tiny olive oil if you prefer.
Then cut the mozzarella into 8 even parts, and put one in the middle of each chicken. I cannot do dairy well, so I only did 1/8 of a cheese stick (or once) but you can do more in each chicken. I would recommend doing 2x the amount of cheese pictured if you can tolerate dairy.
Once all your yummies are on the chicken, Roll the chicken up in the prosciutto. Add a 1/2 stick of rosemary in the wrap on the outside of the chicken. This can be placed close to the shut opening of the thigh.
Cook them for 50 minutes at 350° and when they are done, make sure to check if the chicken is cooked all the way through. If not add a little more time, every oven is different.
In the meantime, you can cook some side dishes. I made wild rice (not paleo!) for my husband because he is trying to gain weight, and also a easy veggie dish. You can do cauliflower rice or anything you want!
When the chicken is done, Enjoy a glass of white wine and eat that food!
