I discovered purple sweet potatoes not too long ago. I was hesitant to try them having such a fondness for the orange guys.
But having a deep passion for all things new and to learn I decided to try them.
Wow was I impressed. I think I have a new favorite tater!
1 purple sweet potato per person
Coconut oil (I use MCT)
Cut potato into coin slices, 1/4 inch
Place on cookie sheet not touching each other
Drizzl with oil and spices, mix for a complete cover
Cook at 350 for 35-40 minutes
Enjoy! Makes a perfect side dish or appetizer!
