I LOVE coffee. When I say I love coffee I mean that I was that person that would go to two coffee shops a day. After college, I cut down my intake and started doing the bullet proof coffee with non mold beans (as most coffee has mold in it. You can read about here in an artical by Dave Asprey who I don’t 100% agree with everything he say but he does an excellent job explaining mold contamination in coffee with studies to back it up.
Unfortunately, my gut never liked coffee, some say that the composition of molicules is much like gluten, thus my celiac flaring up, and others say it dehydrates your body (read here and here). I could talk about both of those for hours. Your body is 70% water and being dehydrated means it doesn’t function properly. You’d think that taking and 70% water content foods would be the answer but most people don’t do so. The body uses water for every function: transport toxins out to move things along and for proper mineral balance. Those things are disrupted water become scarce and isn’t given to parts of the body need it. Then you have the issue that the proteins in coffee directly cross react to gluten and flare up any auto immune symptoms that most celiacs have. In the study it seemed to be the most processed kinds were to blame for higher reactivity (ya don’t say). In the full study here, up to 30% of the the test subjects put on a gluten free diet will still experiencing symptoms! One of the reactors that those patents were tested with was you guessed it, coffee.
I think the biggest thing is that coffee is VERY acidic. The human body’s pH level wants to be around 7.35-7.45 pH which is slightly base. That means that if we are taking in or manufacturing more acidic moments in our body, the body will not be functioning at the level that it should. Coffee shows an acid level of 5.7 and Starbucks’ coffee being 4.85 yike! When the body becomes more acidic it breaks down… So by drinking the black stuff you are making your body acid.
