I went on a trip to Florida with my husband a while back. We had a blast and were spoiled rotten by his company. One of the coolest things that happen was that one of the servers took a special interest in making sure I had gluten free options.
He brought me out a special breakfast each morning, containing something I haven’t had in a long time; a bagel.
It was so yummy, and gluten/ egg free! I decided “I’m going to make a similar paleo, vegan version!”
So I did, and I got / modified the recipe from HERE (the spunky coconut). I always want to give credit where it is due as I create my own recipes often but have to learn somewhere first! Also, I don’t want to deprive others of awesome recipes that work just because I didn’t think of it first! Why would I re-invent the wheel?
Anyhow, this is probably one I will continue to work on but I wanted to share the recipe with you now because it was so great to have a bagel!!!!
These are gluten/egg/dairy/nut free which is thebomb.com for peeps that have food allergies!
o 3 tablespoons flax seed meal or 1 and ½ tablespoons white chia seed meal
o ¾ teaspoon guar gum
o ½ cup coconut flour
o ½ cup tapioca or arrowroot flour
o 1 teaspoon baking soda
o 1 teaspoon aluminum free baking powder
o 3 tablespoons applesauce, with no added sugar
o 2 tablespoons filtered water
o 1 tablespoon apple cider vinegar
o ¼ cup UNSWEETENED cashew milk (it’s seriously the best.
o 1 tablespoon honey
o ¼ cup melted coconut oil / or grass fed butter
o Preheat oven to 350
o Mix dry ingredients in one bowl, wet in another.
o Combine the two making sure there are no lumps or chunks of any ingredient
o Line a baking sheet with parchment paper
o Take the dough and separate into 4 rolled balls.
o Press dough onto the parchment and form a bagel shape. No instructions here, you be the artist!
o Bake for approximately 25 minutes!
o I haven’t experimented with doubling the recipe but you can pick a day of the week to do this a few times so you have bagels for the week!
