Here fishy – fishy! In honor of the new movie Finding Dory, I have made fish. Actually This Cod has nothing to do with Finding Dory. It was on sale at my local store and wild caught… and delicious.
Lately I have added just a little more meat back into my diet to help my muscles build, but want to keep my digestion on track so I add fish in the mix. I only buy wild caught. NEVER buy fish that has been farm raised. Salmon that is farm raised is dyed and fed “meal” instead of it’s original diet of tiny crustaceans that give it it’s pink hue. This fake “meal” can contain gluten, corn, soy and other fake processed junk… Ew, read more here.
Anyway, I digress and could offer you more research… but lets get back to this awesome Cod.
1 large fillet (double if you are cooking for more than two)
Cayenne pepper 1/2 teaspoon -1/4 teaspoon
Curry Powder 1/4 teaspoon
Cumin powder – 1/2 teaspoon
Salt / pepper to taste
Garlic powder – 1/2 teaspoon
Lime – 1
Fresh garlic – large clove
Olive oil – 2-3 tbsp
Knife and cutting board
A fish masseuse license… Just kidding.
Lay fillet out on parchment paper
Cover one side in olive oil and then the other, massage oil in
Chop garlic clove very fine and massage into the fish
Season each side with salt, pepper, curry, cayenne, garlic power, cumin and pepper then massage in
Cut lime in half and squeeze over both sides of the fish, rub it in as well
Cut the other half of the lime into slices and place atop the fish
Lay fish on oven sheet lined with parchment paper and bake 350 for about 20 minutes checking that the watery center is cooked through but not over cooked
Once fish is ready, serve with an awesome hummus plate and….
