Sometimes the best food is the simplest food. I have found this to be true most of the time!
Of course I love creating new recipes, especially allergy-free ones that taste as good as the real thing! To stay consistent and eat healthy when I’m busy.
This salad is great for 4 people and is simple to double for larger groups. It is filling and like I said WAY simple for your convenience!
1 (5 oz) container organic arugula (should say on the package, it’s the smaller size in the store usually).
1 (10 oz) container organic baby tomatoes, halved (should say on the package, it’s the smallest size in the store usually).
1 (15 oz) can olives -sliced
1 bunch green onions chopped up (pictured)
4 chicken breasts (precooked and cubed or chopped)
1 cucumber sliced then quartered (shown)
2 avocados cubed
Balsamic reduction (I used this) to taste. you can add olive oil too!
Salt and pepper as you wish! I added a little italian seasoning but you don’t have to!
OPTIONAL – add-in’s as allergy free options or diet allows
Croutons (you can find gluten free anywhere really, or make your own.)
Throw the lettuce in a large serving bowl
Then prepare all the ingredients how they are listed above and toss them atop the lettuce
Drizzle in the balsamic and mix carefully
Serve with soup, sweet potatoes or other sides!
