We have been brewing for about a month:) the scoby is really weird but the Kombucha ends up tasting great!
This one is vanilla chia, and O-SO-YUMMY!
1 gallon glass jar (cleaned and dried) +
a scoby (look on amazon or a local health food store) +
1- 16 oz plain kombucha (NO flavor only just the “original”).
Place scoby and kombucha in the jar.
make sweet tea:
Fill a large pot with a little under a gallon of filtered water
Then let it boil
Add 3 black tea bags, and then 2 of a flavor you like- leave in for about 3-5 minutes, then squeeze out and remove
After the tea is brewed add 1 1/2 cup organic cane sugar (the good stuff no white junk) and slowly mix in with the warm tea
When the sweet tea is room temperature, pour into gallon glass jar with scoby and starter kombucha, and cover with a light clean rag and rubber band to hold it (the kombucha must breath).
Leave for 2 weeks then bottle, leaving 2 cups of the kombucha in the gallon jar and repeat process
BE CAREFUL in handling everything- wash your hands but make sure no soap residue contaminates the healthy bacteria-
REMOVE the brown part of the scoby revealing the light newer growth: you really are not drinking much sugar at all because that’s what the scoby eats to survive and ferment the tea adding all the healthy probiotics and B vitamins 🙂
